Remember fighting Demyx's water clones before in the Olympus Coliseum Underworld? Of course you do, well you have to fight through a huge group of these before you can actually fight Demyx. Your not given long so I'd quickly use Comet and have Auto Limit equipped to Donald and Explosion equipped to Sora. Just keep attacking them with Sora and jam Triangle Button to keep hitting around Sora with Comet.
After you've beaten them all the actual fight begins, Demyx uses Water Towers similar to the Fire Towers Axel did when you fought him as Roxas in Twilight Town. To dodge these just Lock onto Demyx and run out of the way when he begins his approach. After this attack he will land to the ground and become vunerable for a few seconds, that's your chance. Whilst he's recovering from using the attack go staight into Valor Form and attack him with everything you've got.
Repeat this process until he summons more Water Clones, you have five seconds to defeat ten of them. The best thing to do is go into Valor Form and defeat them all or use Donald's Comet ability like before.
Due to this it may be a good idea to have plenty of Ether's equipped so you can use Comet more. For healing you shouldn't need more than a few Hi-Potion's, although you may need to use Cure the odd time if your having trouble dodging his attacks.
